چکیده
Contaminated poultry is the major vehicle for consumer's exposure to Campylobacter. This study aimed perceive potential cross-contamination events during preparation of raw that can contribute spread Campylobacter spp. in domestic kitchen environments and understand consumers' meanings justifications on a dish at home. A total 18 households were visited observe consumers preparing recipe included poultry. Poultry samples swabs from surfaces utensils, such as cloth, hand towel, sponge, cutting boards sink, collected before after food tested presence Genotypic characterization 72 isolates was carried out through Pulse-Field Gel Electrophoresis (PFGE). Fourteen chicken contaminated with (77.8%). Twelve (66.6%) washed meat under running tap water eight (44.4%) used boards. Also, only five their hands properly prior or meal preparation. Cross-contamination detected four kitchens, between two boards, sinks one cloth. The presented different levels contamination (< 4.0 × 101 CFU/g 2.2 103 CFU/g), being some lower loads origin three Both C. jejuni coli recovered. Molecular typing by PFGE showed high diversity among isolates. There explanations practice cleaning rinsing chicken, but, general, it an habit linked what they have learned families. These results highlight dissemination strains environment need raise awareness appropriate handling order decrease risk campylobacteriosis.

Quantification of campylobacter species cross-contamination during handling of contaminated fresh chicken parts in kitchens.
Numerous outbreak investigations and case-control studies for campylobacteriosis have provided evidence that handling Campylobacter-contaminated chicken products is a risk factor for infection and illness. There is currently extremely limited quantitative data on the levels of Campylobacter cross-contamination in the kitchen, hindering risk assessments for the pathogen commodity combination of ...
متن کاملConsumer Food Handling Practices Lead to Cross - contamination
Consumers engage in food handling practices that can contribute to foodborne illness, and there is interest in improving those behaviors. The purpose of this study was to determine the impact of the “Food Safe Families” clean and separate messages on cross-contamination behaviors of consumers and to determine the impact of external safe food handling cues. Participants (n = 123) were randomly a...
متن کاملCampylobacter contamination during poultry slaughter in Belgium.
The relation between internal carriage and surface contamination with thermophilic Campylobacter species in broilers was examined by molecular typing methods. Samples from 39 flocks were collected in three Belgian poultry slaughterhouses. From each flock, crop swabs before slaughter and intestines and neck skins during slaughter were collected. A total of 309 isolates were identified at species...
متن کاملRisk factors for antibiotic resistance in Campylobacter spp. isolated from raw poultry meat in Switzerland
BACKGROUND The world-wide increase of foodborne infections with antibiotic resistant pathogens is of growing concern and is designated by the World Health Organization as an emerging public health problem. Thermophilic Campylobacter have been recognised as a major cause of foodborne bacterial gastrointestinal human infections in Switzerland and in many other countries throughout the world. Poul...
متن کاملSources of Poultry Meat Contamination with Thermophilic Campylobacter before Slaughter
The possible sources of Campylobacter spp. in poultry meat before slaughter were studied by examining samples of feathers, cloaca swabs, litter swabs, transport coops, rinse water from coop washing equipment, and chicken breast supports in the slaughter line just before stunning. The samples were collected from 8 broiler houses and from 8 different producers, from a poultry integration system i...
